Now a pressure cooker  is something I grew up with ,grandma’s soup ,and mom’s stews in the pot is something I remember, but it wasn’t until I shot season one of Kokkedoor that I started cooking with a pressure cooker myself.

Kenwood was so nice to give us a steamer as one of the sponsors and today it’s one of the most used items in me kitchen, fast, keep all flavours together and just a pleasure to work with.

In the recipe is all about the chicken (or any game bird) so you will see that the other ingredients are left nice and big, we look for the taste of the other ingredients but don’t want to have it in the finished product so it’s cut big to remove easily.

Equipment

  • Pressure Cooker

  • Wooden spoons

  • Knive

Ingredients

  • 1 medium chicken cut into portions (or any game bird)

  • 1 large onion cut in half

  • 1 carrot cut in half

  • 1 celery stick cut in half

  • 1 large leek cut in half

  • 5 garlic cloves in half

  • Fresh thyme and rosemary

  • 250g pearl barley

  • 100g chives

  • 50g spring onions

  • 50g flat leaf parsley

  • 50ml Sherry vinegar

  • Salt and pepper

Add all your soup ingredients to the pressure cooker and add 1 1/2l of water (if you have chicken stock it will be even better) place the lid on and cook on low heat for about 45 min

Let the pot cool. Now you can very carefully remove all the chicken, the big pieces of vegetables and the herbs, you want to leave the liquid and the barley behind, don't worry too much if some of the smaller vegetable bits remain behind.

Remove the skin and the bones from the chicken and put all the meat back in the pot, you can now season everything nicely with salt and pepper.

Place chicken, soup and barley in soup bowls. It's a thin soup with incredible flavours, and let each guest season their own bowl with some sherry vinegar and the fresh herbs garnish.
